Source: Sally's Baking Addiction, with white sugar and molasses in place of the brown sugar

Ingredients

  • ½ cup (8 tbsp / 113 g) unsalted butter
  • 2/3 cup (130 g) granulated white sugar
  • 2 tsp molasses for a light brown sugar flavour, or 1 tbsp plus 1 tsp for dark
  • ¾ cup (75 g) almond flour
  • ¼ tsp salt
  • 1 tbsp light or dark corn syrup, or milk
  • 1 tsp pure vanilla extract
  • Optional: ½ cup Nutella or melted chocolate

Method

  1. Melt ½ cup butter in a medium saucepan over low heat. Add 2/3 cup sugar, 2 tsp molasses, ¾ cup almond flour, ¼ tsp salt and 1 tbsp corn syrup. Cook, whisking, until the sugar dissolves and everything is combined, 3 to 4 minutes.
  2. Take off the heat and whisk in 1 tsp vanilla. Let it sit and thicken for 5 to 10 minutes while the oven heats.
  3. Heat the oven to 350°F. Line baking sheets with parchment or silicone mats.
  4. Drop scant teaspoonfuls 3 inches apart. Bake 6 to 8 minutes, until golden brown around the edges.
  5. Cool 5 minutes on the sheets, then move to a rack. Sandwich with Nutella or chocolate if you like.

Notes

  • Brown sugar swap: 1 cup white sugar plus 1 tbsp molasses stands in for 1 cup light brown sugar, or 2 tbsp molasses for dark.
